- 1/2 bunch curly kale [3 cups - chopped]
- 3 cups fresh spinach
- 1 cup fresh blueberries
- 1/2 cup cooked sweet potato [cubed]
- 1/2 cup fresh Jicama [chopped]
- 1/2 cup cherry tomatoes
- 1 red bell pepper [chopped]
- 1/4 cup purple onion [minced]
- 1 cup fresh strawberries [chopped]
- 1/2 cup red grapes, halved
- 1 cup Wildly Organic Dried Mango [chopped]
- 1 cup Wildly Organic Goji Berries
- 1/2 cup Pine Nuts
- 1 tablespoon chia seeds
- 1/2 cup sunflower seeds
- 1/4 cup freshly squeezed orange juice
- 3 tablespoons Wildly Organic Coconut Oil
- 1 garlic clove, finely minced or pressed
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
Directions:
1. Set your coconut oil and orange juice aside.
2. Lather the kale and spinach with the coconut oil.
3. Mix all of your remaining ingredients in a large bowl, add your seeds and nuts in last.
4. Pour orange juice directly on salad and mix to stir.
5. Smile :)
