Spring into Health: 3 Simple Salads for a Healthier Lifestyle, a Healthier You

 We at Peter Rubi believe that life is too short for boring salads.

A salad is a great opportunity to not only add additional fiber and vitamin C to your diet; but to also showcase some of your favorite produce in one meal. A salad should feel light and crisp with each bite. The key to a truly healthy salad is citrus. Adding citrus to any salad helps amplify the iron in your favorite green. 

We have taken some of the most popular produce items for spring and created 3 simple and delicious salads that are easy to make and enjoy.

1. Butter Brunch Salad: Enjoy this simple and refreshing salad on it's own or at brunch with your friends and family. *If you are currently consuming dairy products, feel free to add fresh feta to this salad as well.

  • 1/2 pound of washed butter lettuce
  • 1 cup of fresh arugula
  • 1 thinly sliced red apple
  • 1/2 cup thinly sliced strawberries
  • 2 teaspoons of salted almonds
  • 1 thinly chopped green onion
  • 1 thinly sliced cucumber

The Dressing:

  • 2 teaspoons of avocado oil
  • 1 teaspoon of freshly squeezed lemon juice
  • 1/2 teaspoon of freshly chopped dill

2. Sweet Immunity Salad: This is the perfect salad to make when your energy, your immunity and your taste buds need to feel refreshed.

  • 1/2 pound of escarole lettuce
  • 1 cup of fresh spinach
  • 1 cup of cherry tomatoes (a variety of colors preferred)
  • 1/2 cup of fresh mint (finely chopped)
  • 3 tangerines (peeled and sliced)
  • 1 teaspoon of chia seeds
  • 1 teaspoon of flax seeds 

The Dressing:

  • 1/2 cup of freshly squeezed orange juice 

3. The Friday Salad: It is the end of the week and it's time to party. Enjoy this fun salad in celebration of the weekend.

  • 1/2 pound of fresh arugula
  • 2 avocados (peeled and chopped)
  • 2 tablespoons of grilled corn
  • 1/2 purple onion (minced)
  • 1/2 cup of fresh red pepper (minced)
  • 1/2 cup of fresh green pepper (minced)
  • 1/2 cup of black beans (cooked, rinsed, and dry) 

The Dressing:

  • 2 teaspoons of avocado oil
  • 1 teaspoon of fresh lime juice
  • 1 teaspoon of taco seasoning
