Perfect Vegan Rice Pilaf

Cahokia Rice is locally grown, arsenic free, and naturally higher in protein than most rice varieties. 

1 1/2 cups Cahokia Rice 
1 zucchini, grated
1 summer squash, grated
2 medium carrots, grated
3 Tbsp Wildly Organic Coconut Oil 
3 1/4 cups vegetable broth
1 Tbsp Grind to a Salt
2 Tbsp fresh basil
1 green onion [chopped]


1. Rinse your rice in a fine mesh sieve to wash away some of the starch.
2. Add your coconut oil to a saucepan and melt over medium heat.
3. Add zucchini, carrot, and rice and stir carefully to coat.
4. Add broth and your salt to the saucepan and cover.
5. Bring to a boil over medium heat, then reduce heat to low for 15 minutes or until the water has all been absorbed and the rice is tender. Fluff rice with a fork and add additional salt if you desire.
6. Add your fresh basil and stir.
7. When you are ready to serve your rice pilaf, add the chopped green onion on top as a delightful garnish.
