3 Simple & Delicious Easter Recipes by Peter Rubi

Easter has always been one of our favorite celebrations here at Peter Rubi.

We have included some of our favorite recipes to share with those we love.

  • 1 pound of shaven Brussel Sprouts
  • 1/2 cup of Wildflower Honey
  • 1/2 cup of Coconut Oil
  • 1 teaspoon of Paprika
  • 1 teaspoon of Pink Salt

  1. Place the coconut oil in a frying pan and begin to heat the oil gently.
  2. Add your Brussel Sprouts and be sure to toss them in the heated oil as evenly as possible.
  3. Once Brussels are just lightly brown add your seasoning. Toss the Brussels again.
  4. Remove the Brussels from heat and drizzle your honey as evenly as possible. Toss your Brussels again.
  5. Serve!


Spicy Egg Bites

  •  1 dozen Brown Eggs
  • 1/2 cup of Vegan Mayo
  • 1/4 cup of Hoff & Pepper Everyday Hot Sauce
  • 1 teaspoon of Black Pepper
  • 1 teaspoon of Paprika
  1. Boil your brown eggs for 13 to 15 minutes. Soak the eggs in cold water after they have been boiled. 
  2. Remove the shell from your eggs as gently as possible.
  3. Cut each egg in half and gently remove the yolk. Place your yolks in a separate bowl. 
  4. Once all of your yolks are in a bowl, add your Vegan Mayo and mix. Try to make the yolk as creamy as possible. 
  5. Add your Hoff & Pepper Hot Sauce and mix again.
  6. Gently spoon or squeeze your yolks back to the center of your eggs. You may use an 'Icing Pouch' for added appeal.
  7. Sprinkle your black pepper and paprika over the eggs as a finishing garnish.
  8. Serve!

  • 5 Cucumbers
  • 1 cup of Fresh Dill
  • 1 cup of Vegan Mayo
  • 1/2 cup of Red Wine Vinegar
  • 1 teaspoon of Pink Salt

  1. Slice cucumbers as thin as possible.
  2. Mince your dill.
  3. Add your cucumbers and dill to a large bowl.
  4. Add your red wine vinegar and mix carefully.
  5. Add your vegan mayo and pink salt and mix carefully.
  6. Serve chilled!
