3 unique and Keto friendly veggies to grill this Memorial Day
Many current Keto dieters aim for less than 50 grams of total carbohydrates or 20 grams of net carbs (total carbs–fiber) as a reliable way to enter ketosis. Grilling your asparagus spears will result in a delicious crunchy exterior and a soft and smokey interior (just like your favorite french fries!) One cup of asparagus is only 5g of net carbs. Each spear of asparagus is less than .03g of carbs. We highly recommend dipping your grilled asparagus in our freshly prepared hummus for added flavor and fiber (and minimal carbohydrates!)
Artichokes rank among one of the most antioxidant rich vegetables currently on the market. Artichokes are also rich in insoluble fiber. Insoluble fiber is like gold to the digestive system. Insoluble fiber does not rely on water to flow through the digestive tract. Insoluble fiber actually has the ability to bulk toxins in the body and excrete them effortlessly. Skip the chips this Memorial Day weekend and grab a medium sized artichoke. Simply break apart the leaves and lightly rub each one with coconut oil and sea salt. By lightly grilling the leaves (for 2 minutes or less) you can create the perfect fiber rich chip to dip into our famous plant based queso or fresh guacamole. With only 5 grams of carbs per 1/2 cup serving, artichokes make an excellent low carb and Keto friendly vegetable to enjoy all summer long.
Grilled Green Peppers
If you want to impress your guests in 5 minutes or less, grab a fresh green pepper from your fridge. Simply slice the pepper and drizzle it with olive oil and a touch of your favorite taco seasoning. Place your pepper slices on the grill for a couple minutes and allow the ends to slightly char before serving. They also pair well with our fresh mango salsa for a sweet treat with a savory crunch. Green peppers are overloaded with vitamin C, vitamin K and potassium. With just 7 grams of carbs per cup, they can also make a great addition to your Keto stir fry dishes.
